Give this recipe a go below.
Using a fork, prick each potato a few times, then place directly on the shelves of the oven and bake for an hour, or until crispy on the outside and soft on the inside.
Next, deseed one red pepper and trim the spring onions, then finely chop. Trim the tough end from one head of broccoli, finely chop the stalk and slice the head apart into bite-sized florets.
Drizzle one tablespoon of olive oil into a large casserole pan and place on a high heat, then add he pepper, spring onion and broccoli stalk. Cook for five minutes, or until softened, stirring regularly.
Stir in a heaped teaspoon of smoked paprika and cook for another minute, then add the two tins of cannellini beans - juices and all.
Scrunch in a tin of plum tomatoes and a tin's worth of water, then bring this to the boil. Season well, then transfer to the oven and bake for 30 minutes, or until thickened and reduced.
Toss the broccoli in a tablespoon of olive oil and scatter over the beans for the last 10 minutes. Remove from the oven and then grate over the cheese.
Serve the spuds and beans with watercress, spinach and rocket.
