Look no further if you need inspiration for your next event, we've got you covered... Stuffed Apples Serves 4 ● 250ml dry cider ● 100g honey ● 1 tbsp stem-ginger syrup ● Juice and zest of 1 orange ● Juice and zest of 1 lemon ● 150g dates ● 100g pecans ● 100g sultanas ● ½ tsp ground mixed spice ● 2 tbsp diced stem ginger ● 4 red apples 1. Preheat the oven to 160ºC/140ºC fan/gas mark 2½ and line a baking tray with parchment paper.
2. Place the cider, honey, ginger syrup and orange and lemon juices in a saucepan on the hob. Bring to a boil and simmer for 5 minutes.
3. Chop the dates and pecans. Mix them in a large bowl, together with the sultanas, mixed spice, diced stem ginger, and lemon and orange zest.
4. Cut through each apple horizontally, slicing off the top section of each to create a “lid”. 5.
Cut the core from each piece of apple, also removing some flesh to create a hole into which you will be placing the spiced fruit mixture. Dunk the tops and bottoms of the apples in the cider syrup. 6.
Spoon the fruit mixture into the holes in the apple centres, pushing it down well to fill the apple completely. 7. Bake for 35-45 minutes or until soft and golden.
