When Warren McCoubrey moved to Manchester from Belfast in 1998, the city, generally, was radically different — only one Metrolink line was in operation. Unsurprisingly, a lot has happened in the past quarter of a century.
Now, the 45-year-old works in Cask, located in one of the symbols of the post-1996 bombing Mancunian resurgence. New Islington Marina, which it overlooks, was created out of the Cardroom Estate at the turn of the millennium.

Where’s your favourite hidden gem?
I don’t know if there are any hidden gems in the city centre, everyone knows about everything now. I would have always said it was our other place, on Liverpool Road — around that area, a lot of places did not reopen after Covid, or they changed use.
One that is great is the Marble Arch. It’s well known, but it’s that little bit out of the way.
It’s a great boozer, with great food.
What’s your favourite view of the city or in the city?
There’s the obvious one - 20 Stories, which is a fantastic view. I prefer that to Cloud23 in Beetham Tower. I did used to love Manchester House, which had a 360-degree bar around the top. You could see one side with Salford, and the other was Manchester.
I’d say 20 Stories overall though, because I think a huge problem in Manchester is that people never look up. The architecture is fantastic.
