You can grab a can of tomato soup from any supermarket for your lunch or tea, but everyone would admit a homemade bowl is better than anything else. And now, thanks to Jamie Oliver, you can follow this "super easy" classic tomato soup recipe in just 45 minutes, reports the Express.
Jamie waxed lyrical about his recipe on his official website, writing: "Making your own tasty tomato soup is so easy! This one's a simple classic".
This batch can serve up to six people and is perfect for a cold winter's night when you have guests over. However, quantities can be amended dependent on how many people you have to serve.
Each serving contains 122 calories so slimmers need not worry, and you can add whatever you want as a side, such as wholemeal bread.
Begin by peeling and slicing the carrots, celery and onions, before chopping up the garlic and heating two tablespoons of oil in a large pan over medium heat.
Chuck in the prepped vegetables, then cook with the lid ajar for 10 to 15 minutes, or until the veggies have softened up.
Crumble up the stock cubes in a jug, then add 1.5litres of boiling water and stir until the cubes have dissolved. Add this to the pan of vegetables, then pour in both the tinned and fresh tomatoes, leaving the green stalks on.
According to Jamie, these stalks give the tomatoes an "amazing flavour". Stir and bring to the boil, then reduce to a simmer for 10 minutes, keeping the lid on. Meanwhile, pick your basil leaves.
Take this pan off the heat, and season to taste with salt and pepper, before adding the basil leaves and stir these in as well.
You should then pulse the soup until it is smooth and then serve. This tomato soup makes a great starter, or plate it up with some crusty bread for a hearty lunch.
