With temperatures dipping in recent days and a cold snap on its way, there is nothing better than a hot bowl of hot soup to warm you up.
And Jamie Oliver has the perfect recipe if you are looking to whip up a pot of goodness without having to spend hours slaving over the hob. The TV chef's 15-minute meal series includes a huge range of dishes from dinners to lunch time ideas, with his Mexican Tomato Soup a quick and easy but hugely tasty option to add to your meal plans this week.
The chef was inspired by his time in America within Mexican communities as they often served up lovely tomato soup. So, Jamie decided to put his own spin on the dish, saying the soup brings some sunshine to the kitchen despite the wintry weather outside.
"I wanted to bring a little bit of sunshine back to Essex today and make a lovely Mexican soup", Jamie said in a recipe video posted on his YouTube channel.
Starting the recipe, he said: "So we've got four spring onion, just hack these up roughly, any old how.
"In the pan, we're going to use two tablespoons of extra virgin olive oil. We've got no time to much about here, so straight in with frying".
Jamie goes on to add some coriander stalks to the pan, setting the leafs aside to use as garnish later on.
Add in four cloves of garlic, popping into a garlic with the skins on before squeeing straight through and adding to the pan. You can crush before chopping the garlic using the side of a knife if you don't have a crusher.
Jamie goes on: "A brilliant trick for a really sun-bushed flavour is these [blackened, roaster peppers]. Add 450g, just chuck the whole thing in."
