Ensure the crayfish pieces are cut into small chunks to make bite-sized portions. Carefully layer on some of the sour cream topping, creating a small peak on each blini, then add a couple of pieces of crayfish to one side.
Gently spoon on a tiny amount of caviar, adding a pop of salty flavour, before topping off with a sprig of fresh dill for colour and scent.Tip: Prawns, which might be more readily available to buy in-store, make an excellent alternative to crayfish.
