From lukewarm bowls of soup to tired looking sandwiches, lunchtimes can feel a little, well, uninspiring. However, with Dean Edwards’ fragrant Thai-style rice salad, boring lunches are sure to be a thing of the past.
Bursting with flavour thanks to its jasmine rice and chopped mango, not only does the dish taste good, but it's filled with nutritional goodness too. What’s more, after prepping all of the ingredients, the meal takes a matter of minutes to wait, meaning that you can spend less time cooking and more time savouring your lunch.
Now that sounds dreamy! On-The-Fly Thai-Style Rice Salad Serves 2 Ingredients ½ red onion, finely sliced 100g cherry tomatoes, halved 70g sugar snaps, halved lengthways ½ under-ripe mango, peeled and chopped 150g cooked prawns 50g salted peanuts, crushed 2 x 250g pouches of microwave jasmine rice Salt and pepper For the dressing 1 tbsp mango chutney 1 tbsp fish sauce 2 tbsp olive oil 1 tbsp sweet chilli sauce Juice of ½ lime Method Whisk together all the dressing ingredients, then portion into two containers. Mix together the onion, tomatoes, sugar snaps, mango, prawns and peanuts, then divide into 2 sealable containers.
At work, microwave the rice according to the packet instructions, then tip into a bowl of the salad. Season to taste, pour over a container of the dressing and stir well to combine.
